Banana Chocolate Chip Oatmeal Muffins (with Lard)
These are a staple in our home, because let's face it, who uses up all their bananas before they are overripe? I suspect my husband "forgets" to eat them just so I will make muffins. These muffins are delicious, and a good snack for busy days.

For extra fluffy muffins, use pastry flour. Makes 12 muffins.
INGREDIENTS

1/2 cup lard

1/2 cup brown sugar

2 eggs

2 tsp vanilla

3 ripe bananas

1 cup rolled oats

1 1/2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1/2 cup chocolate chips

INSTRUCTIONS

Place muffin liners in muffin tray.

Whisk lard and brown sugar until light and fluffy. Add eggs and vanilla, mix together. Add bananas and mix until smooth.

In a separate bowl, combine dry ingredients, leaving the chocolate chips out. Add dry ingredients to the wet mixture and gently combine using a spatula, don't over mix. When the dry ingredients are almost incorporated, add the chocolate chips.

Preheat oven to 375°F. Carefully spoon the mixture evenly into your lined muffin tray. The cups will be quite full, don't worry though.

Bake at 375°F for 18 minutes, or until golden on top. Leave muffins to cool in the try for 5 minutes then remove them and place on a wire rack.
